Soil Type: Terra Rossa (red clay intermixed with lime deposits over a hard limestone bedrock)

Fermentation: Partial native and house cultured strain in tank

Skin Contact: 18 days

Aging: 12 months in French barrique

Tasting Note

The color is dark black-purple and bright. Alive. On the nose, there are traces of bright blackberry essence, cinnamon, cooked beetroot, and violets. The aromatics unfold slowly and meld with an underplayed oak bouquet. A fresh line of lasting acidity provides tension and balance to the typically demonstrative Cabernet tannins and the weight of the just-ripe

berry fruit flavors and textures. Acidity and tannins fight it out at the palate’s end before ripe yet taut fruit.


COW’S CORNER GRENACHE SHIRAZ MATARO

Region: 100% Barossa

Varietal: 80% Grenache, 15% Shiraz, 5% Mataro

Nose:

Spice and plums and dark fruits; grated chocolate and vanilla pod. Musk, cinnamon and mocha. Here is also earth freshly dug and a bowlful of dark berries. Oak’s bouquet is matched by those dark berry fruit aromatics, and vice versa. Yin and yang.

Palate:

Rich red berry flavours (grenache) then earth and spice and plums (shiraz) and thirdly a long, leafy back-palate (yes, mataro - you’ve worked this game out now, haven’t you…)The sum, however, is much more than the parts. The tannins are neat but not in any way unnoticed. Acidity holds the line. The pure fruit and berry notes are balanced by the tannins and the oak’s spice.


In Summary:

This giving cup of red wine is something of an all-rounder, both with food and with people. A BBCruelled sausage, some Chinese pork spare rib, tagine with cous cous? The plush fruits coupled with the acidity make this possible; as too do they satisfy a range of people, which can in some social settings be nearly as diverse as the food.


CALVARY HILL BAROSSA SHIRAZ 

Region: 100% Barossa

Varietal Composition: 100% Shiraz

Tasting Notes

Nose:

Dark Barossa chocolate, liqueur chocolate and dark plums.Spice, lavender, rosemary and sage. Heightened aromatics of fruit and herbs combine with a gentle bouquet of oak’s vanilla to jump up, out of the glass. Integration.

Entry:

Inky and intense, as if there are rude handfuls of ripe Barossa shiraz grapes in every glass.

Middle Palate:

This is also a well structured wine, which brings a discipline to the underlying fruit vivacity.

Finish:

Palate length is long, with a savoury and pleasantly peppery finish. The aftertaste is of dense blackberry and forest fruits. It rolls and rolls, but never becomes overwhelming. Bright and fresh to drink.
