The Hill & Dale label offers a range of accessibly styled wines with a New World character for international appeal created by awardwinning winemaker, Guy Webber. Grapes for the Hill & Dale wines are selected
from vineyards within the Stellenbosch region. Extensive vineyard management programmes are in place for each of the vineyards from which the fruit is selected. All aspects of the process are strictly governed so as to comply with the standards set for the Integrated Production of Wine (IPW) system.
Merlot
Alcohol by Volume: 14%
Intense, vibrant ruby. Fresh red raspberries and currants upfront with tweaks of hazelnut and herbaceous Italian parsley leaf. Medium to full-bodied, the wine displays a generous warmth with flavours of dark,
ripe cherry, sweet plum and stewed raspberry. The clean and elegant aftertaste is friendly, dry and very well balanced. Extremely friendly in its youth the wine should gain in complexity to an age of three to
five years. Some favourites for pairing with this wine are pork and peanut wantons with soy sauce drizzles, pulled mutton bolognaise, braaied lamb chops and juicy Boerewors.
Pinotage
Alcohol by Volume : 14%
A complex melange of red fruit flavours, enticing spiciness and earthy nuttiness. Medium full in structure with a supple juicy softness.
Complex coming together of red cherries, dark, ripe plums and shriveled prunes with fruit cake-like cinnamon, cardamom and cloves. In the background, hints of mint, white pepper and earthy nuts add to the overall appeal.
Medium-full in structure, the wine is friendly and supple with gentle, though ample tannins, a sweet, rounding fullness with an elegantly-dry finish.
This food-friendly, versatile wine will best complement succulent game burgers with camembert and cherry-compote toppings; biltong pizzas with blue cheese and caramelized onions. Wholesome Sheppard’s pie and traditional Bobotie will also be winners.
