Rich and mellow; shows a perfect balance between soft, ripe apple and blackberry fruit and spicy dryness.
In hand-crafted wooden tubs we allow crisp spring water from the White Burn, malted barley and yeast to work magic. For a day more than most distilleries they rest together to ferment. It is this patience which allows layer upon layer of sumptuous flavor to form.
We have enhanced this bounty of taste by maturing these fine whiskies for a min. of 18 years. Our Malt Master has then skillfully married them to create a divinely multidimensional Single Malt. Enjoy the delicious sweet cedar, rich walnut, silky chocolate and salted honey notes. It is a celebration of the fragrant complexity achieved by our 3 day fermentation and one of our most decadent, delectable and sophisticated drams.
NOSE
Soft, inviting, dry and autumnal nose. Sweet, stewed fruits, ripe autumn apples and rich berry fruits. Roasted nuts; hazelnut, walnut. Fragrant wood. Then a rich vanilla and toffee smoothness. A little water restores the appetising fruit.
BODY
Light to medium body, softly coating the tongue.
PALATE
Firm to full palate. Dry and sweet; nuts, dark toffee and gentle mint, rhubarb and apple juice. Deeper hint of almond biscuit. Dries, with a rich, silky cocoa bitterness, growing spicy. Water brings up sweet fruit, blackberries.
FINISH
Long, smooth and warming finish. Sweetness softly introduces a longer, drying oakiness. Stewed-fruit freshness. Wood-smoke spiced with faint black pepper.
